250g SR flour
25g plain yoghurt
1tsp salt
100ml lukewarm water
Mix the flour, salt and yoghurt together roughly then slowly mix in the water bit by bit til you can start bringing it together with your hands.
You may need a bit more water, you are after a soft springy texture.
Knead til smooth, a few minutes, then put in a clean bowl, cover with cling or a tea towel, and rest for at least an hour.
Cut into 6 pieces, roll into balls, then roll out on a floured surface to about 2-3mm thick.
Heat a bbq or frying pan and when it’s hot cook the pittas on one side for about a minute til puffed up, flip and cook the other side for another minute. Drizzle with olive oil or flavoured oil and sea salt.
Any unused dough can be wrapped in cling and used the next day.
I used yesterday’s leftover dough for breakfast this morning with soft boiled eggs, avo, garlic yoghurt, fried tomatoes and feta, herb salad, and dukkah 💚💛❤️ Happy Spring Day 🤗🤗🤗
