Day 5. Leftover rice fridge raid Nasi Goreng (ish)



2 eggs

Half a shallot, sliced

Half a red chilli, chopped

A clove of garlic, crushed2 spring onions, chopped

Half a carrot cut into skinny sticks

A handful of leftover cooked broccoli

Cooked rice

Any spicy sauce/chilli paste

Soy sauce

Fish sauce

A pinch of sugar

A sprinkle of herbs

 

In a wok or large pan fry the shallot, garlic and chilli in a couple of tablespoons of hot veg oil for 30 seconds, stirring.

Add your other veg, a teaspoon or so of your spice paste (depending how hot it is 😳🌶) the rice and some salt.

Keep stirring over a high heat to warm through, about 2 minutes.

Add a tablespoon or 2 of soy, a splash of fish sauce, and a pinch of sugar.

Stir through and taste, adding more of any of the seasonings to taste.

Take off the heat, toss with the omelette, tip into a bowl and top with the herbs.


Use any cooked green veg you have, or use raw shredded greens or cabbage.

Add cooked chicken, pork or prawns if you like at the beginning.


I had this pot of XO sauce in the fridge, it contains EVERY ALLERGEN KNOWN TO MAN 🤣🤣🤣 and I have no idea why I bought it, but it was bloody tasty!!! In other news, we found a swede on the roadside on our morning walk. Brucy Bonus 😃
