Day 1. Baked Eggs with no green stuff



Been away for 12 days and haven’t been shopping yet!


4 rashers of bacon

Half a red onion, sliced

A clove of garlic, crushed

A spoonful of thyme leaves

1tsp harissa or chilli paste

A splash of wine vinegar

Half a tin of roasted peppers, chopped

Half a tin of chopped tomatoes

A tin of cannellini beans

4 eggs

Some feta

1tbsp toasted cumin seeds

 

Fry the bacon til crisp in a pan or casserole that ideally has a lid.

Remove the bacon and fry the onion, garlic and thyme in the residual bacon fat with a pinch of salt for a few minutes to soften.

Stir in the harissa and vinegar, then add the peppers, tomatoes and cannellini.

Clamp on the lid or cover with a roasting tray and cook for a couple of minutes til it’s bubbling, add a splash of water if it gets dry.

Crack in 4 eggs, turn the heat to low, and cook, covered, until the whites are just set, about 3-5 minutes.

Chop up the bacon and scatter over the top along with some crumbled feta, and crushed toasted cumin.

Serve with garlic yoghurt and toast.

Substitute chickpeas, fresh tomatoes or peppers, Parmesan, parsley etc etc!!!
