65. Lobster Thermidor Benny 😃


Birthday brekkie because my gorgeous mate George got me a live edible hamper for my pressie! A spider crab, a brown crab, and a lobster!!! Prize for most original gift in 49 years!!!

We made a mustardy Bearnaise and then glazed the top with Parmesan to turn it into Thermidor! 👍🤣


Ingredients for 2:

Meat from 1 very fresh cooked lobster!

2 English muffins

Handful of spinach

4 poached eggs

2tbsp finely grated Parmesan


FOR THE SAUCE:

2 egg yolks

80g butter, melted

1tsp white wine vinegar

2tsp Dijon mustard

 

Place the yolks in a bowl and sit over a saucepan containing an inch of barely simmering water making sure that the bowl doesn’t touch the water.

Whisk the yolks til they turn pale and increase in volume a little, 1-2 minutes, then whisk in the vinegar and mustard.

Very slowly add the melted butter whisking all the time to make a beautiful silky Bearnaise. Season to taste and keep warm.


Toast and butter the muffins. Wilt the spinach with a tiny splash of oil or butter in a small frying pan for 30 seconds then divide between the muffins.

Lobster meat next, then the poached eggs. Spoon on the sauce, grate on the cheese then gratinate with a blow torch (v. dangerous; see video) or under a hot grill for a few seconds. Recommend a rum cappuccino alongside.
