Being a caterer I found 2 kilos of pork cheeks in the freezer that needed cooking as had been there a LONG time.
1 kilo of stewing steak or lamb shoulder or pork shoulder or cheek, cut into large chunks.
3 onions, chopped
3 carrots, chopped
3 cloves of garlic, chopped
2 celery sticks, chopped
Some herbs, 2 bay leaves a big bunch of thyme and some rosemary
A bottle of red wine
A tablespoon of redcurrant or other fruit jelly
Turn on the oven to 150
In a large casserole or roasting pan heat 2 tbsp oil on the hob.
Season the meat and fry it on both sides to brown.
Remove the meat, add the veg and cook for 5mins.
Scatter over the flour and season.
Give it a stir, put the meat back in, tuck in the herbs, pour over the wine, and stir in the jelly. Cover with foil, pop in the oven, and cook for 3 hours.
You can now freeze in portions ready to go...
We will use it to make a pie, a pasta sauce, and just eat some with cabbage! 😊
