54. Blistered Sesame Greens


Cleaned out the veg draw ready for the excitement of the weekly shop 🤩 so used up the rest of the greens in a sticky spicy stir fry, with a joint of treacle marinated beef @curlyhils was messing about with (thanks@petehayward72 for the beef recipe it was Dee-lish 🤗)


For The Greens:

Sprouting broccoli

Spring onions

Spring greens

Edamame beans


For The Dressing:

2 garlic cloves, crushed

1 red chilli, finely chopped

2tbsp soy sauce

1tbsp rice vinegar

1tbsp honey

2tsp sesame oil

2tbsp toasted sesame seeds

 

Mix all the dressing ingredients together, taste for sweetness and add more honey or chilli to taste.


Use as much veg as you need of course, but the dressing serves 2 so adjust the measurements depending how many you are feeding.

Trim the broccoli and spring onions. Remove the stalk/spine from the greens and tear the leaves up by hand.

Blanch the edamame in boiling water for a couple of minutes.

Heat a splash of veg oil in a large heavy pan or wok over a high heat and fry the broccoli and greens with some salt for 6-8 minutes turning over now and again to achieve good blackening and blistering.

Try a piece to check and when tender enough (but still robust and a bit crunchy) throw in the spring onions and edamame and cook for another 2 minutes.

Pour on the dressing and toss about, check the seasoning and as soon as the liquid is bubbling tip onto a plate and serve.

We topped these with a handful of crispy shallots and served with the treacle beef, but they’d be good with loads of stuff.
