If you squint this could be a plate of golden oysters šŸ¦Ŗ not potatoes šŸ„”šŸ¤£ and Bo wouldnā€™t have cared either way šŸ¶ greedy dog.


I made a failed batch of beetroot gnocchi for which I used baked potatoes, and saved the skins and a bit of the leftover baked potato mash.


We melted some butter and warmed the mash up in it, grated in some cheddar, scooped it into the skins, grated over a bit of Parmesan and baked in a hot oven for 15 minutes.
