30. Skins!


If you squint this could be a plate of golden oysters 🦪 not potatoes 🥔🤣 and Bo wouldn’t have cared either way 🐶 greedy dog.


I made a failed batch of beetroot gnocchi for which I used baked potatoes, and saved the skins and a bit of the leftover baked potato mash.


We melted some butter and warmed the mash up in it, grated in some cheddar, scooped it into the skins, grated over a bit of Parmesan and baked in a hot oven for 15 minutes.
